  • Diglyceride

    Diglycerides are made of two main parts: a glycerol, and two fatty acids. This particular diglyceride I drew is made of a standard glycerol with a saturated fatty acid and a cis polyunsaturated fatty acid. This substance is usually just called a diglyceride with no other names and it is used in food processing to make foods “feel better” in the mouth by improving their texture. They can also help oil and water stay together, which means that this substance also has emulsifying properties. This is beneficial in making foods like red pepper sauce and ice cream.
